Baking with Mom… Childhood Memories

Today is National Cream Cheese Brownie Day. It is a thing, complete with a hashtag just for this day: #CreamCheeseBrownieDay. The photo above is from Yammie’s Noshery.

Some of my favorite childhood memories, were watching my mom bake in the kitchen. Okay, so watching her wasn’t what hooked me, it was knowing I’d get to lick the spoon, or beaters or if my little brother wasn’t around, I may even get the ENTIRE scraped bowl all to myself.

Watching mom make brownies, was as much a science lesson as it was a reading and following directions lesson.  If I remember nothing else, I know DO NOT OVERBEAT the eggs.  You see, the secret to the best brownies lies in the eggs.  Who knew?  There is science behind it, how mixing them just right causes them to almost double in size, whereas beating them has the opposite effect. But regardless, how you treat the eggs depends on how delicious the brownies turn out.

Substitutes were also an important baking lesson learned.  Her go to reference book, The Joy of Cooking. I still use mine regularly. Did you know you can mix regular milk with vinegar if a recipe calls for buttermilk? True story.  And if you like banana bread, nothing beats the easy banana bread recipe found in the pages of that cooking bible.

So, a day devoted to cream cheese brownies.  There are no better pictures I’d rather see floating around Instagram than these chocolatey delights. Memories of mom, and warm ooey-gooey brownies. This may be my favorite day yet.
