An Apple a Day…

An apple a day keeps the doctor away.  Plus apples make a great snack.  Filling one up on fiber, satisfying crunchy and sweet cravings… apples may just be the perfect fruit.  I’m always looking for ways to incorporate more fruit into my children’s diet.

Sure, they love apple slices with nut butter or some sharp cheddar cheese, but toss some apples in salad and it opens a new world of flavor to them.  This recipe seems easy, healthy and the kids can help make it.  Adding to the grocery list of must try dinners and lunches.  Fighting off the winter blahs…

Taste of Home Chicken Apple Salad

Ingredients

  • 1 medium ripe avocado, peeled and cubed
  • 2 tablespoons lemon juice, divided
  • 2 cups cubed cooked chicken
  • 2 cups seedless red grapes, halved
  • 1 medium tart apple, chopped
  • 1 cup chopped celery
  • 3/4 cup mayonnaise
  • 1/2 cup chopped walnuts, toasted
  • 1/2 teaspoon ground ginger
  • Lettuce leaves, optional

Directions

  1. In a small bowl, toss avocado with 1 tablespoon lemon juice; set aside. In a large bowl, combine the chicken, grapes, apple, celery, mayonnaise, walnuts, ginger and remaining lemon juice. Stir in avocado. Serve on lettuce-lined plates if desired. Yield: 5 servings.
